Each boss fight is harder than the previous one, and the Elysium boss is a notable jump in the difficulty, but it's all about learning their patterns, not rushing, and having a build solid enough. You'll get there, keep trying!
As others have said, the general procedure is to focus down the big bull boy first. After a few fights with him he becomes one of the most predictable bosses in the game: He doesn't actually have a lot of moves at all.
When ya spear boi Theseus is throwing a spear at you there'll be a lil pink crosshair appear on you. Once you've learned to spot that you'll be able to, with practice, know when the shot is going to be fired. There's a subtle audio cue to go along with. The key then is to get a pillar between you and theseus before he actually throws the spear. It can't go through those so it doesn't hit you. Whilst the minotaur's still alive you'll want to kite him relatively far from theseus so that you'll have a few pillars that can potentially block the spears.
After theseus throws a spear, he will walk off in the opposite direction of where he threw. That's the window to stab him in the back with your weapon of choice. When he gives God a call this naturally gets a bit tricky but the principle is the same.
It's the boss fight that probably requires the most practice, but I promise you it does get easier.
Hope that helps! Also, the pact of punishment almost makes this fight easier to me as Theseus usually just rides around the outer edge of the circle until you've dealt with Asterius 1 on 1.
The strategy I used before being so juiced up on Upgrades and Aspects that I could face tank all their attacks and still have the hp to smack the final boss up as well, was to ignore Theseus and focus on dodging Asterius. Don't attack simply get used to Asterius' attacks. Once you've gotten adept at dodging Asterius. (You can learn this from the solo fight with Asterius as well since his patterns in both are the same) you can usually do it whilst fighting Theseus since both of their attacks in Phase 1 are Telegraphed very well. Focusing them equally will only make the fight considerable harder as you have to dodge the Aoe of Asterius' attacks as well as the gods The best piece of advice I can give anyone for this game is to not worry about dying. Try to learn the attacks and mechanics of the boss fight and once you have it down you'll start to beat Elysium a lot more consistently. Using cheese to beat this fight will only have you struggling later one when you have to use different weapons or boons
For Theseus' spear throw simply hide behind the pillars and once he throws it rush in for a few hits then back out, do not be too greedy as you can be punished by a series of swift spear strikes. As mentioned earlier once in phase 2 you can use your call to do considerable damage since his invulnerability does not last through the full duration of the attack from the gods whilst yours either gives you full invulnerability for the entire duration or gives you I-frames on start-up.
For Asterius you can just dodge directly through him for most of his attacks. He doesn't turn around for most of them and continue to attack into nothingness. When he charges put you back to a pillar and dash through him, once he hits the pillar he'll be temporarily stunned giving you a chance to attack or gain distance. In phase 2 you can do the same, simply dodge through him, try not to go to the sides as his aoe can hit you there. When he Jumps you can dash straight through him and then hit his back while he recovers.
If you're really struggling with this fight try the Shield of Chaos with Doom effects. It's slow but has the best defence as you can hold forward and ignore. I used this my first time beating the final boss and it helped me learn the mechanics of both the final boss and the fight between Theseus and Asterius well enough to come back with Stygius and beat them down.
