Theseus is mostly a patience fight. Wait for him to attack, dodge carefully, hit him a few times while he is recovering, and then run away before he's ready to attack again. Prioritize safety over speed. He only has two common attacks, and they are both easy to see coming--as long as you aren't too close.
Spear throw: Hide behind a pillar, or keep moving perpendicular to Theseus (watch out for when it boomerangs back to him)
Spin charge: Dash through Theseus and get as far as you can behind him
Save at least 200 coins, so that if you use up a death defiance, you will have a chance to buy it back from the Well of Charon.
Are there any Sword/Shield + Aspect + God combo that can do high damage to Theseus ?
And I rarely ever get the Kiss of Styx in the well. I wish I got it more, would be a proper run saver.
My personal favorite aspect for the sword is Zagreus (increased speed makes it easier to dodge and buffs DPS at the same time). Preferred boon is probably hangover from Dionysus, because sword has fairly high attack speed but fairly low damage, and especially against Theseus because you only get to attack him intermittently but the hangover will continue hurting him while his shield's up. Chill (Demeter) is also quite good on high-speed weapons because it stacks so high. Aphrodite is kind of awesome on pretty much all builds because she adds so much survivability (keeping your enemy weak is almost like a +43% boost to all max life and healing; Life Affirmation is also incredible if you can get it early; Broken Resolve and Different League boost survivability still further).
Sword: Given that Theseus always turns around after recalling his spear, Zagreus can go to town and apply a ton of backstab damage. The mirror grants +50%, a hammer upgrade gives you +200%, and the 'Exposed' status effect from Athena can provide another +75% or so.
Spear: Special attack goes right through Theseus and inflicts backstab damage on the recall. The mirror grants +50%, and a hammer upgrade increases this another +50%.
Aphrodite: Maxed out Call gauge inflicts 2500 (or 3750 w/ cast) damage.
Poseidon: Collision damage from knockback cannot be blocked by Theseus' shield.
Also, is the Aspect of Arthur any good ?
It's very good but need some practice because of how slow it is. It demands a pretty radical change of playstyle compared to the other swords but it's worth it in the end. It allows to tank more hits (though not taking damage is always preferable) and can dish out some insane damage.
Shield with aspect of Zeus is quite powerful, but takes time to get used to the shield throw. Get Zeus lightning/Artemis arrows on hit and the shield will shred anything it touches. Bonus points if you get the Daedalus hammer that makes your attacks hit twice but removes the knock back. That keeps enemies stunlocked in the lightning-arrow-tornado of death.
Oh damn, I skip that ability most of the time. I'll definitely keep this in mind.

That's definitely my kinda play style.
There is a way to make the special come out faster with some kind of dash cancel. I think once you get the timing down you can play much more aggressive with the aspect in high heat.
