What effect does giving Olympians Nectar have?
Beyond getting their keepsakes? In feel like it must do something. Why else would it continue to give you the option to give it to them?

It mostly serves narrative purpose. But for some characters if you give them enough nectar they will start accepting ambrosia and give you a companion (a toy) which can help you during your runs.

Besides the original trinket on the first donation, nothing. It's all about narrative right now.

I could be a good thing there's a reward when the maximim bond is reached. Like add 10% on rarity of this god's boons. And something else for Thanatos and Eurydice... For as now, I'm always looking for finishing zeus and Artemis.

You are able to form a ''bond'' once you maximize friendship with any character. At the moment you can form a bond with Zeus and Artemis. While this does not give any extra reward beyond the narrative I do think these bonds will come into play in later updates. Just a hunch of course no solid evidence of this being the case.
