Sword with "Tidal Wave" is always working, in my opinion. Basically, you play around Poseidon boons which add dash damage and knock-back. This build might seem weak at first, but it can deal up to 2000 damage against non-boss enemies with one combo. You need Boons from Poseidon that increase damage when crushing enemies against objects, as well as the boon that makes enemies get knock-backed a second time. Additionally, having more dashes in succession from Hermes is decent. In short, you can dash around bosses dealing around 100 Damage per dash against bosses, while you crush non-boss enemies with your knock-back against walls.
Playing around with different Boons around Doom from Ares might also be a good idea.
The Heroes boss is not difficult once you get how they work. Theseus usually keeps his distance and uses ranged attacks, while the other one charges towards you and deals heavy area damage. I recommend focussing on one of them, usually the minotaur, because he tries to get close to you and thus is annoying to keep an eye on him. Once the minotaur is down, Theseus is merely a matter of dashing to dodge at the right time.
Phase 1: Wait for Minos to do his move, Dash-attack in, swing once or twice, dash attack out. Repeat until dead.
Phase 2: Smack Thesus until he does... anything other than walk away. Shield up, block his attack, bull rush him and continue smacking. You need to be a bit more reactive once he Calls but it shouldn't be too hard once Asterius goes down if you aren't cast-based
The real trick is to note that Theseus won't start Calling until you knock him down to half health, and further that Theseus will only rarely follow you out of the center ring of pillars. Thus, you can greatly simplify the fight by luring Minos to the outer edge of the arena and whittling him down as you lead him around the arena or back and forth between two pillars, making sure you're ready to dash or have a pillar between you and Theseus whenever the crosshair-and-pinging-noise telegraph for the spear throw finishes.
Once Minos is dead, move to center stage and bait out another spear throw. Sidestep it with a well-timed dash, then punish Theseus when he turns his back on you. When he turns to face you again, back off a bit to avoid him using his spin-slash, then repeat this bait-punish-retreat tactic. Theseus' desperation-move Call is a prime time to use your own Call -- he stops moving and blocking for the duration of his first Call, so he's wide open to both big burst-damage Calls like full-bar Artemis or Aphrodite, while also vulnerable to the set-and-forget options like Demeter, Zeus, and Dionysus. Continue punishing his spear throws while staying out of the Call circles, and Theseus should fall with little difficulty.
