How do I build scissor intersections outside of stations?

I've been trying to find something that lets my trains switch tracks if they need to, when I have large sections of wide tracks (more than double).

Are my only options to somehow manually build them or make sure the train starts off on the right track in the first place?

Uh, yeah. Just build them.

Easy:

branch two tracks out. Then connect them (pressing ctrl key will switch right/left). then move the track segments into position and adjust the spacing.

you branch out single segments.
