Mojo's speech quirk was removed (edit: inconsistently)
Yeah. I don't believe anyone else was changed; only Mojo.

Clearly of all the things to do with the remaster, this is what deserved the most attention.

There are various generic lines which run on the accent script. Mojo's accent script is, as far as I can tell, intact. So for those generic lines, Mojo will speak with his speech quirks.
There are also various defined lines as part of events, where the accent script is not used and everything is written out manually. This is the case with his joining event. These are completely inconsistent and for some of them his speech quirk has been written out completely while for others it's been written out somewhat and for others it's been left untouched.

I'll provide some examples here. Note that for the remaster text some lines are cut apart due to formatting.

I cannot think of any particular reason for this, if anything it seems like the game may have had multiple editors going through the script and one of them was removing his speech quirk from his dialogue while the other was not. That's the best guess I can make for why his dialogue has been rendered inconsistently like this.
With any luck Squeenix will actually address this in a patch.

the accents and slangs were why Chrono Cross was so unique!! you did not understand everything? And what? :D That was done on purpose.

I compared the first conversation with Harle in Viper Manor between the original and the remaster and her dialogue was almost entirely identical. The ONLY changes were that the line about Kid giving Serge fleas was rephrased into two dialogue boxes instead of one, and the "You are the one whose derriere shall be kicked" had the "non?" at the end removed. Again, her dialogue in that scene was otherwise identical, so I don't know what you're talking about here.

By the way, I cheated Mojo into the party earlier and saw a line with him in Termina. In both classic and new graphics modes his dialogue was identical and contained the speech quirk. I'm not sure if this is because you're not meant to have him this early so they didn't bother adjusting the dialogue at this point or if they actually forgot to modify his speech script in general and as such only his unique introduction dialogue had the quirk written out. I'll need someone further into the game to try playing with him in the party until some generic dialogue pops up to verify.

what about other dialogues with him? maybe they forgot to make his lines slangy in the introduction speech

Getting rid of one person's accent and leaving everyone else the same is kind of racist and erasing culture.

Did other characters have their cultural aspects removed, or was it just Mojo?

The entire point of Chrono Cross was heavily accented dialogue which was painful to read. The fact that they'd target one specific form of speech to censor is pretty disgusting. Like, what do they have against people who share similar speech patterns?

Just Mojo. As a perfect example, there's a particular scene near the end of the game where every single character has event text written out for them. I've gone ahead and compiled them with the original dialogue on top (taken from a script dump of the original game by Zeality on GameFAQs), and the remaster dialogue on the bottom (taken from the game's script spreadsheet, hence the code being left in):

There are 42 lines of dialogue across all the party members. Here are all of the changes, in order:
1. Zappa's line had "Ah ken" changed to "Then". Zappa's accent was left alone elsewhere though, he still talks like a Scotsman in other event dialogue. Notably, these particular event lines were also the only place in the original game where he ever said "ah ken". Lines where he said "dinnae ken" in the original are untouched in the remaster.
2. Macha's "WOW" was dropped down to "Wow", and a comma was changed to a fullstop.
3. A comma was added to Glenn's line.
4. Leena's line changed the sentence "We can end everything here." into "Now all can be concluded at last."
5. Miki had an ellipsis changed into a question mark.
6. Draggy's line was changed from "I'm gonna fight to prrrotect all my frrriends I rrreally like." to "I'm gonna fight to prrrotect all the things I've come to love!". Accent still visible, of course.
7. Mojo had his accent removed entirely.
8. Funguy's line was changed from "In search of a new path alongside nature!" to "We have to find a new path alongside nature!".
9. An ellipsis was removed from Irenes' line.
10. Mel's line was changed from "In search of a brighter future with nature!" to "We have to find a brighter future alongside nature!"

That's it. Should make it plenty clear that Mojo was the only character targeted for accent removal in any consistent manner.
Funnily enough, this dialogue depends on the arrangement of the party members, so if Mojo is in the slot where he gets the generic dialogue in this scene instead, his accent will be present.

That accent actually makes that stupid doll more likable. Because at least it makes more sense.. Instead of being over the top perky it is more like a VooDoo doll.

I just looked through every single line of Pierre's in the script and the only one where his accent wasn't visible was the same in the PSX version.
