The first game (Beginning & Always) only has Cove as the main love interese. Later on, the devs will release two DLCs that'll let you have a romance with either Baxter or Derek.
A thing to keep in mind, however, is that those DLCs won't be anywhere as long as the main game (as it would basically mean making a whole other game centered around each of them).
So, lifespan-wise, those won't be nearly as long as the main game.
For the second game though (Now & Forever), the geniuses (is that a word ? Am I making up that plural ?) at GB Patch have decided to bless us with two love interests. Since the first game had a male character, the second will have a female one, and a non-binary one.
Also, someone asked (over on the second game's Steam forums) if a poly relationship would be in the cards, and the official answer is : although they can't promise it, the devs would really like to make it a possibility. However, if they end up doing it, it'll only happen during the last stages of the game, not during multiple steps (meaning you'll still work on a relationship with only one of them, and end up in a poly relationship toward the end of the game).
I hope this clarifies things.
