MAME (current) is the one you should be using and is more updated.
Tab is the key to access its menu and also within that menu is where you can customise the menu button.
Because some mame games only work with a certain version. Which is the mame current one? As i downloaded all the mame versions. From my many years of using different mame versions this holds true that certain roms only work on certain mame versions.

I'm using just one mame (current) and all the games I tried work w/o issues (the whole set). Maybe your romset is old, try with a new one. Using many mame is kinda a mess.
Not sure which one is current as there is none in the list that say current in the online updater.
Please remember not to talk about or mention where you got your roms (especially from the web). I'd edit your message if I were you.
Besides using the last build guarantees you tons of bugs fix, many corrections, more compatibility, and more.
I don't mind having different mame versions as retroarch keeps the mame version i chose in set core.
Just wish there was a way to verify all my mame roms.
