Como dije son miles y miles además de multiplicidad de géneros. Ya te pasaron algunos podés también buscar videos de recomendados con "los mejores de" y ponés la consola.

Pokemon crystal clear is a great pokemon crystal rom hack
Super smash rom hack add lots of new characters to add.
Mega man 2/5 NX are up graded Rom hacks of mega man 2 and 5 that makes them into GBC games.

Gundam Vs Gundam Plus for the PSP is a amazing gundam arcade that runs on PPSSPP
Digimon re coded has a translation patch that works nice as well.

*If you play Persona 1, try the PSP version, it's the original. The PS1 version is unrecognisable, they changed characters' looks, names and even city names. But the gameplay is dated. Persona 2, on the other hand, is not dated, it's old but practical. Play P2 Innocent Sin first, then P2 Eternal Punishment.

Super Metroid Phazon is the best rom hack I've ever seen. You play as Dark Samus when it emerged right after the end of Metroid Prime 1, so the game shows how it became more powerful than Samus in Metroid Prime 2. Rarely we have the opportunity to play as the villain, this one is perfect, I wish Nintendo made something official at least as DLC.

Pocky and Rocky 1 and 2 on the SNES.
It's hard as hell but is very cute and fun.

Shatterhand for NES is badass with a killer soundtrack.
