Edit: I should also mention that I always did all of the dungeons in a single in-game night.
The normal way is you don't use much SP and go for physical approach with ambushes, that way you can wipe the floor with them without wasting SP at all after some tries, also, you most likely will only clear dungeon in one go after the third or fourth, probably.
How we manage to clear a dungeon without grinding? We do grind, the early game is quite hard and you must grind at least a little, the early game you don't have much to do other than Yosuke and Chie so you can spend most of your time grinding, but it really doesn't take long.
-If you do grind make sure to go up/down floors. It respawns enemies but also chests so you'll get a bunch of SP raising items along the way.
First one is tough to do in one day, but you do get a chance to grind a bit for free if you keep resetting the first floor that very first time you go in before getting chie. Those extra few levels, like up to level 8 or something, will help a lot.
But also
You should use some of these, don't hoard em. They're way way wayyy more useful in the first two dungeons than they are later on. You'll eventually have a way to restore SP repeatedly for money (like an "Inn" in a typical JRPG). And it gets cheaper as the game goes on.
Big mistake, you should always use your item whenever you need to in the early game, because later they will literally become useless since you will have access to some powerful persona skills that entirely replace their function.
I always beat dungeons in one day(Including P3, P5), and my tip for you is that you never want to fight an enemy that has no weakness in the early game, including the rare golden hand(because the most efficient way to kill them is using almighty skills), if you run into them just escape the battle, it is not worth the effort. Invest your SP to deal with enemies that have weakness only and use the all-out attack to finish them. When you got comfortable with your DPS output, use melee skills to fight your enemy and save the SP for recovery skills.
This game really is not very hard at all, even on Very Hard. If you really played P3 and P5 for as long as you did you could have figured this out on your own.
