I have encountered people who started their careers with hope only to have something happen along the way that killed their joy at work. I also happen to know some people who grew affectionate with those they served at their jobs (teachers and nurses) and felt a sense of loss when the latter eventually had to move on. Her flirtatiousness and mercurial temper are somewhat reflective of some of my friends' associates at work who have somehow become jaded and bitter and now use what they have at their disposal to indulge themselves despite their frustrations.
The 10-stage social link format is not able to flesh out this character fully, but even with what we have, there is a surprising degree of verisimilitude. It is not about liking someone like her, but that she reminds us of what we see in real life. That gets a plus from me.
You might still be able to advance a few ranks if you want since there aren't that many things to do at night. However, if you are going on to NG+, you might prefer to work to get more money instead.
You do empathize with her though
If you're asking about Sayoko the character/the S Link itself, I don't really like her because she always seems like she takes longer to rank up than the others, though she's still not as bad as Temperance in that regard.
Still, that is a solid social link, you just have to endure it a little until you get the "why?'.
