I was wondering, how it is possible to rank up the courage and choose that option?

When you finish the game once, you get to start a "New Game+". Your stats, money etc. will transfer into your new game.

You can in new game plus, there's a lot of chat options you can't pick going through the first fun of the game.

It's not, the first time through.

Just like how it's not possible to get to Knowledge 4 to get 1st place in the first exam your first run.

...you CAN get most of them though. There's only a few that are straight up impossible.
