All cards are always keeping their stat changes. It's not even related to Endless, all other means of returning creatures back to play always keep stats.
What's NOT kept are buffs and debuffs, so if your creature gets its bonus stats from e.g. Rage, it's not going to be kept.
To make endless work on this card, endless effectively adds +1 stat health in order for it to be playable again. Its the only case in which endless adds to a stat. Which is confusing. For consistency's sake, this card should no longer be 'endless' once the health stat drops to zero (at least in my opinion).
