Starting Steam VR?

As far as I was aware this wasn't supposed to have VR support, but it keeps starting SteamVR when I try to start the game. How do I prevent this?

I'm sorry this is happening to you - you are right, the game does not have any VR support.
The same problem is mentioned in this discussion

Do you have an Oculus Rift? If so, this part might help:

"I've found how to stop it from happening: disabled 'other VR applications' mode in oculus settings."

I've an HTC Vive, is there an equivalent setting I could check in steam?

I don't know about a similiar setting in HTC Vive, but one way to prevent SteamVR from starting apparently is to unplug the HTC Vive before starting a game in Steam.
