There is also pve modes like horde mode(which I only play if i feel like it) and there is Escape mode(boring)
Then there is pvp which I hate because it's not fun. Lots of tryhards.
Since you skipped 4. The locust didn't die off. They evolved into the Swarm. After the events of gears of war 3 ending. They are kidnapping people to pod them (slowly turning them into a member of the swarm). The swarm are connected to a network. That's how they communicate with each other. They kidnapped Kait's mother because they needed a new queen to lead them. OFC they went out to save her but it was too late so they killed her to end her suffering.
Now in 5. You just have to play to understand what's going on now.

As for the campaign, you're not gonna be playing on the hardest difficulty so you can make it as hard or as easy as you want. So if you just miss gears, put on a low difficulty and enjoy.
Compared to the trilogy, there's a lot more cutscenes and dialogue, the pacing is slower and 50% of the game is set like an open world game where you can either go for the main objectives or stray and complete the side objectives. More info in the linked review.
Thank you for the replies and sadly for the multiplayer part IIRC I tried it before and I just couldn't find a good stable game so I just gave up on it - however the campaign is the only thing I'm interested in which I'll give 2 hours sometime in the near future to see if I like it or not.
