And all the other DLC's simply add more content, mechanics, and options.

The fact that it's on Steam in the first place, is simply because it's the most popular western site, to sell games.
So it was an obvious choice for their international release of the game.
But the problem with Steam, is that they don't like the sexual stuff.
That's why all of the actual 18+ content for the game, is being sold from a separate site.
3) The story itself isn't too long, but there are many additional story events.
But in the end, most people don't really buy it for the story.
Rather for the ability to do "Things" with your custom maids, and as a tool for making comics, videos, or just some nice screenshots.
Just imagine being able to do whatever you want with your favourite characters.
That's pretty much what this game is all about.
So you can play with it for as long as you like.
But the story is still nice, though.
I also bought every DLC so far and I use PayPal for all my purchases, at least with PayPal you don't have to use credit card numbers also with PayPal they charge a really small fee for converting USD to Japanese currency since the Developers are located in Japan. for instance S-court sold the last DLC for $25.65 using Paypal it cost me $26.47. It was several months after they released the game that I had to use my Credit Card before they accepted PayPal so witch ever way the website is safe enough.
I only get E-mails from S-Court when I make purchases and no other emails from them.

I just use the games Steam Discussions to see whats new or if I have any problems.
s-court would have put everything on steam, but they ran into trouble with steam's inconsistent treatment of adult content, and rather than fight it, they just put everything other than the all-ages version of the game on their website. And they don't even provide updates for the all-ages version via steam, because that would overwrite the 18+ patch. So, if you want the full game, you can buy the all-ages version from steam (or even from s-court's website) and then buy the 18+ patch, or you can just buy everything from s-court directly. Personally, I see no reason to involve steam given that you're forced to buy most of the content off-site anyway.

There, they sell the 18+ version of the game, the 18+ patch, new maid personalities, and the larger DLC such as GP-01. The descriptions on each item are pretty bad, but they each have a link at the bottom of their description, above the system requirements, which goes to a page describing the content in more detail. In general, the major DLC adds some combination of outfits, hair styles, yotogi (basically sex positions), events (including sex scenes), dances, and rooms to the game, though GP-01 and GP-02 also add some new game features (e.g. GP-02 will make it possible to marry a maid when it comes out sometime this winter). The maid personality packs add new maid personalities (the base game only has three). The Japanese version of the game apparently has a lot of additional maid personalities available for purchase, but we've only gotten two of them thus far for the international version.

The larger DLC is installed via an installer, whereas the smaller DLC has to be downloaded from their store while the game is running and then gets automatically installed the next time you start the game.
s-court adds more of the smaller DLC items once or twice a week. It's mostly more outfits, but it also includes hair styles, dances, yotogi, and events. It also has bundles for most of its DLC, which makes it cheaper, but it will still get pretty expensive if you decide to buy it all.
The 18+ patch basically just unlocks all of the yotogi and sex scene content. It doesn't uncensor anything (and I don't think that the all-ages version contains anything that would need to be censored, though I'm not quite sure what it does when you strip your maid naked when choosing her outfit - it probably forces underwear, but I don't know, since I just bought the 18+ version rather than the all-ages version and the patch). If you want to actually uncensor the game, then in addition to the 18+ version of the game, you'll need to install mods. This guide - https://steamcommunity.com/sharedfiles/filedetails/?id=1820854643 - has some good information along with an outdated mod pack which uncensors the game, but it's mostly just useful for information now, since that mod pack does not work with the current version of the game. However, it does install a lot of different mods by default, so if all you really want is to uncensor the content, you'll probably want to uncheck a lot of the stuff in its installer.
AFAIK, the game basically goes on forever, though you do progress through a story of sorts via events, and you can get more events via DLC. Presumably though, a lot of your time in the game is likely to be spent having sex with your maids to either unlock more content as their stats increase or just for the sex.

FYI, if you ever see the game referred to with "It's a Night Magic" in its name, that's the all-ages version. If it doesn't have that in its name, then it's the 18+ version. IMHO, it's a bizarre way to distinguish the two versions, but knowing it may make some of what you read less confusing (like why the 18+ patch is called "CUSTOM ORDER MAID 3D2 It's a Night Magic adult content supplement patch," but nothing other than the adult patch in s-court's 18+ store has "It's a Night Magic" in its name).
Pretty much by definition, mods are created by folks in the community and not the developers. Whether any of them are worth installing is of course completely up to you, but plenty of people insist on having the game be uncensored, and that does require mods thanks to the fact that Japanese law requires the censorship in Japan, and the developers did not choose to uncensor anything for the international version.
One last question I have though is if the GP-01 and GP-02 (or I suppose just the GP-01 since GP-02 isn't released yet) are necessary to enjoy this? Could I get by with just the 18+ patch or should I go full degenerate and get everything?
Either way, I'll probably still get this on steam if only for the chance of a good sale in the future but who knows.

Whether any of GP-01's content appeals to you depends on you. As for whether it's required, that really depends on what s-court does with DLC in the future. Right now, none of the other DLC that we have requires GP-01. In fact, the additional maids require a patch to be able to use the content added with GP-01, and only one of them has a patch for that at the moment.
However, looking at the Japanese version of s-court's site, I think that GP-02 is going to require that you have GP-01, and it looks like some future maids will probably require GP-02. So, it's quite possible that at some point in the future, you'll need to buy GP-01 and/or GP-02 in order to use another piece of DLC, but right now, you don't need GP-01 (and GP-02 isn't out yet), though you may want it for the content that it adds.
In general, the base game is just fine on its own. It's then just a question of whether you're interested in the additional content added by any specific piece of DLC. It wouldn't surprise me if the "pure love" and NTR event packs (they're in the store that the in-game menu sends you to) each requires that you have the one before it (they're numbered), but most of the DLC doesn't depend on other DLC, and you can pick and choose.
That being said, if you buy GP-01 together with the game, you do save a couple of dollars, so unless you just really don't want to buy it unless you have to, it probably makes sense to buy it up front rather than wait. Either way, some of the folks in the official discord will have a better idea of what will be required for future DLC, since a number of them play the Japanese version of the game. So, if you want details about that, you should probably ask there.
I think that every time there's been a sale for this game on steam, s-court has had the same discount on their site. So, I doubt that you'll end up saving money buying it on steam, but if you wait for a sale, then you'll obviously end up paying less regardless of whether you buy it here or there.
The way your describing it makes it seem like just buying the game off their official store is the better/quicker way to go.
I'm assuming if I do that then I don't have to worry about installing patches and mods on Steam right?
(Also I would prefer it to be in English if possible)
There are zero updates for this game via steam. Whether you buy it directly from s-court or on steam, if you want to install an update, you will have to download it and run its installer. There are no automatic updates of any kind. And steam provides no mod support for this game. So, if you install any mods, it's going to either involve simply copying files into the game's directory where the mod author tells you to put them or using an installer if the mod provides one.
Buying the game on steam means that it's part of your steam library, and if you don't like it, you can get a refund with less than two hours of playtime, whereas I'm not sure that you could get s-court to give you a refund. But if you buy it on steam, you'll need to go to the effort of buying and installing the 18+ patch, and at least at the moment, if you also buy GP-01, you'd end up paying $2 more than if you just bought the 18+ base game with GP-01 included from s-court.
Unless you're just really not sure that you want this game and want the ability to get your $40 refunded, there really is no advantage to buying this game on steam (and you'll lose the $5 for the 18+ patch even if you refund the game on steam unless you can talk s-court into giving you a refund). Everything else you get for this game will be from s-court directly, so adding steam into the mix is an unnecessary complication IMHO. The game is also fully DRM-free if you buy it from s-court directly, since then you have an actual installer instead of the base game being installed via a launcher.
If I were to buy this game right now, I would just buy the 18+ game with GP-01 for $68 directly from s-court: https://dl-en.s-court.me/item.php?iid=110
It would mean saving $2 and would be simpler than involving steam in the process. Of course, if you don't buy GP-01, then you don't save the $2, and you're just spending $45 either way, but it's still simpler to not bother with steam.
Ultimately, having the game on steam improves its visibility and discoverability, but since none of the DLC is sold on steam, and there are no updates on steam, I see no advantage to owning the game on steam. If anything, it's worse.
Regardless, whether you're buying the game from steam or you're buying it from s-court's English site, you're getting the international version of the game, and it will be in English. For the game to be in Japanese, you'd have to buy the Japanese version of the game from s-court's Japanese site.
You really spent way more time then you should have on a couple of dumb questions like mine.
I'm still on the fence as to whether or not I'll get this but I'll definitely keep an eye on it in case it goes on sale.
If I have anymore questions i'll probably write them here.
