BG3 uses a modified version of 5e, with changes specifically designed to make multiclassing more viable (and exploitable). Plus it has more gear to support Cantrips, a different Feat list, etc. So I wouldn't necessarily count on it.
For op: you might want to test things out in the game by cheating for levels and trying out your builds.

Thief DOES get that extra bonus action. Remember that the character needs to be dual-wielding if you want the bonus action ATTACK ability. You're going to be wanting both of those weapons to be Light.
PS - Don't waste a feat slot choosing "Ambidextrous".
