Best Multi-classing options in UB ?
One of the strong points of the Unfinished Business Mod is that it makes Multi-Classing possible, which is a thing I often liked to do in Tabletop D&D to devise creative builds !

For those who explored that option a little, what effective/fun/fascinating combos of classes worked best for you so far ?

There are so many! Ranger/Rogue and Barbarian/Rogue (for example) are great combos. I don't multi-class spell casters because there isn't much benefit to it IMO, but other class combos can work really well.

Definitely martial combos like Monk/Fighter. Casters don't generally work quite as well unless the rules have been heavily bent like in BG3, though 2 levels of Fighter isn't terrible in Solasta in a higher level campaign. Rogue is a decent multiclass candidate too, sometimes Bard.

5e isn't that difficult and Solasta isn't that difficult, so you usually can't completely gimp yourself regardless of multiclass combo. You may as well be as creative as you like.

At level 11 with a 6-man party in the main campaign --> POI, I'm currently building these combos:

Arcanist Ranger 5 (Shield/Misty Step, extra attack)
Raven Rogue 4 (rogue stuff, heart shot, took it to L4 for the additional ASI)
Fighter 2 (Action Surge)
Not sure where I will go next

Tirmar Pally 6 (Extra attack and aura)
Rift Warlock 2 (good ranged option)
Mana Painter Sorc 3 (Careful Spell meta for BA spells)

I've also got a Wolf Spirits Barb that I've got 1 level fighter, a second level next level. Not sure where I'll take this one either.

The other 3 are monoclassed battle cleric, spellmaster wiz, and marshal fighter

I've used the ranger/rogue build before, and he really blasts out the damage. Not sure what I think about the Sorlockadin(?) yet. I am liking being able to EB at range instead of lamely throwing a javelin or whatever.

Warlock and Paladin lend themselves well to multiclass in 5e. For example, Paladin 2 -> Bard to have heavy armor, but a lot more spells slots for smiting. Paladin/Warlock pact of the blade for heavy armor, to smite with warlock spells slots, and only need charisma for attack rolls. Sorceror/Warlock to be able to convert warlock spells into sorcery points and recover on short rest.

Just throw 3 levels of Thief on anything. Thief/Fighter. Thief/Barb. Thief/Pally. Fast hands is such a fantastic feature. Use poisons, scrolls, potions, magic from items..... as Bonus Action is insane. Cunning action as a whole also helpful. Sneak attack is glitter, but it counts I guess. Maybe take 1 more level for a feat.
