Casting spells
I marked my shield for both my Paladin and Cleric as diety so they can use and cast spells and they still can't cast spells? What am I doing wrong?

Nothing. The game follows RAW (Rules As-Written) for requiring a free hand to cast a spell with somatic spell components. Disable this if you do not like it. Marking your shield with your holy symbol meets the Material spell component requirement but not the Somatic. Also note that a Cleric with the Battledomain can cast spells even if their hands are not free and wielding a two-handed weapon, like a greatsword or longbow, leaves the off-hand free.

In your settings there are loads of options to disable the more annoying stuff.

I definitely disabled that option right away.
Divine spellcasters like Clerics and Paladins have been casting with both hands occupied for as long as I can remember.

And I wouldn't expect a single DM on the planet to tell a Cleric player "you can't cast spells cause you're holding a shield".

Note that your DMs are being flexible and bending the rules for the sake of FUN so do not let them win arguments over their players with ". . .because this is RAW, QED!" because they are not abiding by it consistently themselves.

I agree and been playing this way for years.
