To copy a spell scroll, right-click it in your inventory, then left-click the spellbook. It has to be a spell available to Wizards.
For rations I would usually bring double the amount of travel time needed to go to the location and back. But now that my Cleric can cast Create Food, I only bring a small amount.
Copying spells into your spellbook is not immediately obvious. Right click the spell, if you can copy it, click on that choice. Then click on your spellbook to record the spell there (it tells you at the bottom of the screen to do that). Some spells you cannot copy (wrong class or too high a level).
As for the look, it's a small development company, so it will not have the polish of (for example) BG3. It isn't a good look, but it is what it is.
Rations. Either you need to take a lot (and they are heavy), or, the easiest option is for someone to have the spell Goodberry, because they cast it automatically as you travel, negating the need for more than a handful of rations
As to the rations issue if you have someone who can summon food (Usually goodberries) you don't need to carry any rations at all as some mentioned they are heavy. They really only come into play if you have a caster who needs a long rest to recover spells. My newest party is four fighters with only one needing the long rest to recover spells but since those are a bonus thing I can still get by using short rests to recover hit points quite a few times before I need to reset them.
Everything else is for the scavengers.
1. I only pick up stuff like magic items, coin, crafting ingredients and arrows. Leave everything else, especially the heavy stuff. You'll get a second chance to change your mind with the Scavengers later.
2. You'll figure it out. Easy-peasy.
3. Financial constraints. Lack of talent. Lack of time.
4. Bring a fair amount. I always carry 5 per character, minimum. If carry weight is an issue, then give them to your strongest dudes and dudettes to carry.
