I'm not sure if its worth mentioning, but the only exception to this is Mastercraft, which on top of requiring several of the professions to be fully leveld up, which takes months (if not years), they also require essentially millions of ADs to get to the point where you can make gear that you could've bought for less, or grinded content to get gear of equal quality.
And I am not sure what you mean by "at what level do we have access to chest?" Do you mean crafting level to create chest pieces?
you can start with professions from level 10 on, there is a quest from Sgt. Knox in PE.
And look for gathering tasks in the professions, Leatherworking/Weaponsmithing/Jewelcrafting and so on, those tasks provide you with an easy way to rank up your professions to unlock all the profession slots.

Is there any benefit to enter a guild before reaching lvl 70 ?
guild stronghold boons for one, which scale with your level, but can still help you while leveling up. and the sooner you're in a guild, the more guild marks you can earn along the way to level 70.

It seems quite a mess to enter a guild. That reminds me of World of Tanks.
Joining a guild before 70 - well, some guilds will only accept a L70 player, while others are more relaxed, and can actually be a great help while leveling up.
