If you are 37+ and don't have the DLC, Norway, France and Finnland are the best maps for S and EXP.
In Norway to get all fish at least once to unlock the better quests, than you can go to 455:411 at the Island, Size 2 hook and Bait fish and or Size 3 and Sea livebait. I use 2 Feeder Rods 30kg+ and 1 Spinning Rod.
Quests
Merluzzo: Get's cought at the island, Bait Fish or Fish pieces.
Whitefish: 707:565 Size 1 hook and Salmon Roe
Turbot (rare): At the Island with Bait Fish and Sea livebait
Squit (night time): At the island, 6,5m depth, Match rod, Size 1 hook and Blood as bait
Seabass Lavrak: At the island with bait fish and spinn fishing
Northern Pike (nighttime): K3/K4 bitfish and spinning baits
With VIP I get a Quest all 20 Minutes. I keep most of the common fish for Quests I know.
There are some really rare Quests like "katch 2x Halibut 15kg+" which can give 2500S and more. But catching the fish is a whole other story.
I prefer the Island spot. I catch some nice fish for the quests and can sell the rest at the Boxes "behind me".

Does this apply to every map? I wasnt aware that it did have any effect besides a shiny medal.
Yes.
Catching all fish on a Map unlocks rare and better quests. Got mentioned in the Patch Notes too.
Scottland is a nice map too, when you cought every fish. There you can get "trophy" Quests, which give 21 big club Boxes.
Another Example: There are Club Quests where you only have to catch X fish, no weight required.
Or: Catching 2x 1,xkg Merluzzo normal = ~300S. The "rare" version of the quests gives ~400-450S for the "same" fish.
