For species trophies, you gotta catch 800 "large" ones. Not just what is named as large, but what is counted as "large" behind the scenes, meaning something close to the "max size" listed on "fish on lake". The exact size cutoff is hidden and will not be revealed. First trophy will give you +3% bite rate with that species, next +3% more and last one the final +3% (bronze, silver, gold).
For trophy size catches, well, you have to fish "right". Meaning if you get mostly large fish the way you are fishing, you are probably fishing "right". The next step is to get lucky, and that one is hard to quantify. Sometimes you get unexpected trophy sized fish, and sometimes you try for a specific one without getting it (i'm looking at you 4k+ leather carp caught! :D ).
