Can you reset your progress?

I know that you use to be able to reset back in 2019. but that's before all the new updates. I bought this for my Mrs to have fun but i started to play around with it first and now I've unlocked pretty much most things. i have uninstalled the game and reinstalled but im still back where i started... well left off really

What this needs if not a restart but a profile save
