It is possible though that you just need to get lucky and I simply stabbed myself with a wrong knife despite having few "flashbacks" about it already...
I've beaten him twice now, used the knife on multiple runs to see the same clue about the cuckoo clock, but I already got the ring out of it previously, and if there's another time I'm supposed to set it to, I haven't seen any clues indicating it? I also have a random wilted flower I can't seem to do anything with except for set it on a barrel or set it on the desk.

Maybe getting a Squirrel Eye suddenly reveals that they are enchanted People or something. You know beauty and the beast style, they were some sort of staff before they got cursed to become squirrels to sacrifice.

Just pick the eye with a slight glow.
It basically reveals the fapping juice of Evil Guy on the walls like a black light lamp.
It thus gives you hints on possible solutions for some puzzles.
Well, considering they are something between talking cards and normal ones it probably is already obvious they are, they change their looks into afraid squirrels as soon as player grabs sacrificial dagger.
In this game its basically, the gamemaster is the most powerful in the room, but after him the next most powerful entity in the room is you.
And the cards are the least powerful.
Thus, they all fear you and the gamemaster. I tried keeping some entities alive for an entire run, as i suspect this might do something.
I mean, the talking cards.
Keeping them alive and buffing their strength seems to cause an effect, at least the first one said something along the lines of "keep me alive please".
And not in some sort of begging way, but in a way of "keep me alive so we can beat him, and if you manage to do that it will benefit us."
I dont know, but again, im sure every eye causes an effect of some sorts. And im sure you need others to find more secrets.
