Tbh the game really wants you to avoid that kind of people, why do you think the game describes itself as "room escape" too?
even if I slow the fight down by a couple of rounds he still cheats

In the demo, when this happens, it was clear you are supposed to die
Here it's not clear at all, because of that message
you need to do certain things to advance : thew plot : or he will kill you at the final blow every time.
It's scripted. And YMMV but I thought it was pretty clear the run had to end there, especially since the game is advertised as a roguelike.
