just looking to figure out how to unlock all the items, starter decks and stuff

For the most part, progress. Beating lower level challenges will unlock harder challenges, bits of lore, new decks, etc. There's also the painting puzzle for unlocking new items that is independent of your current challenge level and instead functions the same way the painting puzzle did in the base game but it rewards you with new items instead. There's a few other secrets you can stumble across, but most of those don't change the actual gameplay much, like one of them just lets you change the music playing in the background.

im mostly trying to unlock new starter decks, I hate the ant deck

Completing challenge levels gives more cards and starter decks. There's no other way to get those things.

so its not by beating the game with one of the starter decks you havn't beat the game with yet?

There's an achievement for beating at least one run with each starter deck, but otherwise no, it doesnt matter much which deck you make progress with as long as you make progress. I personally enjoy the ant deck so it was one i was using a lot until i got to the higher challenge levels. Ants are great, but their inability to buff damage normally does make them far less viable at higher difficulty scores.
