Here is one 'walkthrough' for it:
https://www.powerpyx.com/cyberpunk-2077-sinnerman-walkthrough/
... or this is the link directly to the mission in the diner / restaurant:

It mentions this:
(This thread should probably have a spoiler warning, btw
Joshua wants to make himself a martyr, the new Jesus. Does this City really needs a religious uprising? Would be just more mess in a whole Lake full of mess.
He wants to die anyway, so why not fulfill his Wish right there? Just dont kill the Police officer... made that error once..... caused Maxtac to hunt me down XD
If you want to change his Fate, thats up to you. But if someone wants to end this quickly.... you cant attack him in the Sequence... but as soon he is in the Car, he is open to Quickhacks.
I think nowadays this option is no longer very doable as the policeman will attack you and he kills you in 1-2 shots.
I think CDPR actually wants you to follow through the story.
Update: finally doing that sidemission. Yeeeeah... quickhacking him is no longer possible, but you can still kill him. The Policeman will kill the Customer no matter what... but it doesnt really stop you from killing the target the direct Way. But this Mission seems really buggy^^
If you dont follow the Steps to the Letter (following Bill) the Mission breaks. If you run towards the Car, Bill gets killed and then the NPCs stop moving.... no matter if you attack them or not.
Sadly, its not possible to save before testing different scenarios and i dont want to do the "follow the car" over and over again.
I think i will follow the Quest ...for now. Dont think pseudo-jesus will get his time in the Spotlight.
(edit: nope, cant stand that Guy and the Mission easily gets buggy. Sad that the Customer had to die, but the Contract is done)
How?
When we first caught up with the vehicle and while the guy that hired me in the first place got his head evaporated I ran around to the other side of the vehicle he was in and used my rifle to drill him a new nostril.
And thus it was made so that he would never suffer upon the crucifix to the deviant delight of whatever gonk would want to buy that.
Also that cop that was with him was harder to kill than frigging Adam Smasher.
A funny thing is that those advertisements can be found around the city long before you ever meet him.
They'd payed to get the hype going in advance.
