Once in a while (very rarely) the steering glitches on my bike. It doesn't turn properly and veers randomly. I get off and summon another bike. Then I ride for a ways and get off. Then I summon the original bike and the glitch is gone. Maybe this works with cars also.
Yeah I once had that happen using Jackie's bike. Just summoned another vehicle and used that for a while and eventually it went back to normal.
Is your car damaged badly and the damage makes it turn?
Some mod is affecting your car?

some non-gaming keyboards that matrix input can "lock" some keys, so once pressed, another key being pressed masks you letting up from it, though most keyboards even $5 chinese no-name ODM units avoid key jamming, but usually just letting off all keys and tapping the same key that's "stuck" makes it let go... shouldn't be just driving though, should happen while you're on foot too, if that was the case.
another thing is a controller being plugged in, if there is one configured, or a controller emulator where you are using mouse X/Y to emulate an analog stick, any drift or movement outside the dead zone can cause this.
with a gaming specific keyboard where all keys are independent and you can hit more keys than you have digits for are tracked for up/down state individually, this is way less of an issue than budget keys and built-in laptop keyboards...
Jumpers for goalposts, marvellous.
