The only reason you can't change things like these is because the guys in charge of the game didn't bother or didn't think about it... like half of the promises and advertised game mechanics missing in the game...
Also, how are you supposed to know how they look on your body if you can't try them on or you don't even have a 3d model of the part, just a very small icon?? Same things with clothes by the way, you have to buy them before knowing how they actually look on you... a "triple A" game in 2020, and there are still so many flaws in simple menu designs that many games already owned more than 10 years ago... but this is not the topic of this thread anyway.
Dude, in the game someone mentions that you can replace your cybernetic limb with real skin implants. Problem is the game lacks the customization on that part.
Yup. I just use a retex mod to remove. [Breaks "immersion", well its my game] and a better body texture to remove the anesthesia holes on the right arm.
Well, that and that this has always been how the previous versions of the game worked.

Wrong. Cybernetic limbs are chrome; you are mistaking RealSkinn, which is a cyberlimb cover resembling normal skin for the sake of "camouflaging" the metal.
Also, original poster is wrong too. Cyberware can be mostly removed and replaced with organic counterparts. However, in 2077, it seems bioengineering and body banks have been discarded (perhaps cyberware manufacturers pushed that way to increase their profit margins).
