You may get used to the UI if you give it some more time, though I agree it has a lot of stuff.
So I'd make the same recommendation as these two, if those achievements mean anything to you.
I put up the FoV slider a point or two (for what I think may be my first time in an ungodly number of years gaming). UI is technically taking up the same amount of space, but I'm still able to take in far more of the world.
On the inverse there's Blackwall quickhack mods that are completely imba or other cheat weapons that I'd personally avoid unless you want to breeze through the game.
If you're already planning replay, I'd avoid most mods. But definitely recommend Hidden Gems if you have no intention of replaying or for a second run. It requires CET, if I remember correctly, which is another good thing to have for replays (if not a completionist first run).
If I could go back in time, I'd play it vanilla the first run. I personally modded it to change certain things and it just started a rabbit hole, and I got lost.
Play the game vanilla first run, like the developer intended. Enjoy the story.
Make note of some things you'd like changed, and then...
Explore modding for a second run to heighten replay value.
