What DLSS/FSR/XeSS do is render the game at a lower resolution and use their respective algorithm to reconstruct the final image the best it can at a given resolution, which typically results in higher framerates at the cost of visual fidelity (and blur).
Honestly you need to test it out on your end to see what image and framerate you're comfortable with. "Performance" will absolutely give you the worst upscaling quality but the best performance overall.
Also DLSS/FSR/XeSS are not made equal. Benchmark each one at different settings to see what image and framerate you prefer. But in any case don't use "auto" for either of these, the quality won't be consistent.
