Is it worth doing all gigs?
In the base game, I only ended up doing a handful of gigs (the ones with blue markers, I've done most of the side jobs). Found them kind of boring and formulaic -- just infiltrate a location, get the MacGuffin or whatever and get out. Bit of flavour text and dialogue thrown in, and that's it.

Picked up Phantom Liberty when I was near the endgame, and I found Mr Hands' gigs quite refreshing. A lot of them involved a written through-line, named characters that you get to meet, interesting choices, etc. Had a great time, finished all of them.

So now I'm curious, because each fixer hands out gigs only a few at a time. It makes me wonder if the gigs get better as you progress, more fleshed out, or if they stay at the same level of quality. Also wondering (in vague terms, please no spoilers) whether the completion rewards might be worth pursuing -- Mr Hands gave me a nice car, sure, but it's practically the same car I previously bought, and also practically the same car I inherited from the French twins. Wouldn't mind a bit of variety.

There are.. a number of rewards from Gigs. Some vehicles, some guns etc.. One is quite close to what you might get elsewhere, but it's still a decent vehicle.

Gigs get tougher as you go up the ranks. I found them quite enjoyable, and a good money maker.
Early ones are "go fetch" as you say, but later ones are not.

you can get a few steam achievements too, if you're a completionist

As a feature, the gigs are really fun to do. As for the risk-reward factor, you get some really nice goodies from them. They are definitely worth doing.

Of course, level up your character and earn some money

One might say the game is largely about the gigs. Remember, V's goal is to become a legendary mercenary. It is this motivation that lands him in trouble and, arguably, it is also the possible means to get out of it. Without the gigs it is hard to get the required experience, money and tools of the trade.

So if you don't enjoy the gigs, it might be argued this game is simply not for you. Speaking strictly for myself, I found most gigs actually quite interesting, but then, my goal was to do them quietly. If you gunned your way through them I can readily imagine you might have found them less engaging because shooting is ultimately the easy way out.

Weird response, brother. I've finished my first playthrough over the course of a hundred hours, I'm currently wrapping up some of the leftover content while I plan my second playthrough, and I'm hearing you tell me the game might not be for me (!) because I wasn't so into a limited subset of the side content. Ran a stealth netrunner build, btw, as I do find it a lot more engaging than a guns-blazing approach, but I'm not about to criticize someone for preferring the latter.

Maybe you misunderstood me? I know V has to run gigs. A lot of great side jobs and even main quests were gigs. I'm specifically referring to those quests which the game explicitly considers gigs, denoting them by a blue icon.

Nothing to disagree with in your OP. They're intended to be short little things to do as you move about the city or if you've not much time to play. Formulaic within half a dozen or so different types and with rewards which are mainly nice to have at best along with some world building. There's a tiny subset which do have little callbacks in the game but so tiny I'm not sure how many players know they're there even now.
