So I got spoiled about the endings and I have a question...
Do any of these endings end the game (as in not being able to free roam)?

After the credits you're placed back in the game world with a few goodies just outside 'the point of no return' and able to do whatever you may have missed or free roam.

So canonically V either dies or whatever, but you can still keep playing the game, right?

- Nocturne Op55N1 is the point of no return, Once you finish the end game quest route You get set back to the point just before Nocturne Op55N1, Just before you went up the elevator to meet Hanako. The quest remains unfinished. Everything you didn't finish before going up the elevator remains for you to complete in your save game. Everything you did finish remains finished.
- Depending on the ending choice you made you get some rewards to claim after finishing Nocturne Op55N1 & the specific ending route you chose with it. Like a key card to get into Smashers boat for his smart shotgun.
- You can potentially complete every ending. But the secret ending. The secret ending can only be completed if you made the right dialogue choices with Johnny during his quests. That ending gets locked out if you didn't make certain dialogue choices. Similarily if you alienated certain groups, or have not completed certain missions you wont get those end game routes until you do. Like the Aldecados, or Rogue ending roues.

Thanks for your detailed answer, I'll keep it in mind.

In a sort, yes.
The ending path you chose will play out, credits will roll, and then the game will ask you if you'd like to exit to main menu or go back to the game world to continue playing.

If you have Phantom Liberty then this is not quite accurate. Specifically the ending granted by making certain choices in PL does not give you a save you can go back to, but only that ending.
