you can not run games at max settings 4k 60fps on 20 series cards. espeicualy with Raytracing. and this game is going to support it. the only card that can more or less do this is the 2080ti. right now if you want 4k 60fps with all the eye candy. you're best waiting for the 30 series cards.

You'll want to run 1080p for ideal fps across all three monitors especially when we don't know how power hungry cyberpunk will be on hardware at first.
If you REALLY want to use a triple monitor setup you will need to run at lower resolutions or lower settings until a good enough graphics card is available. Tbh It isn't the end of the world if you need to run at a lower resolution when using all the monitors.
About UW support, we can't really be sure but i bet there will be mods to fix the issue if it isn't supported.
While those setups are awesome for sims i find them quite immersion breaking for FPS games. Personally i use ultrawide for all my needs, from Euro Truck Simulator to Deus Ex or Age Of Wonders Planetfall.
Single player games, obviously, aren’t much of a thing to worry about with that issue. Maybe someone more knowledgeable can elaborate.

There are some 180° Monitors on the market with flexible OleDs. If you are not sure what i mean go into your local electronics market stores, many big ones have them on display to try them out hands on.
180° Monitors need much less beefy graphics cards to run. So your initial problem with graph card too weak would be solved and you still get a better experience than default 16:9 27 inch desk monitors....
Maybe ditch the clunky oboto idea and get one of those 180° monitors? Idk what resolution they run on and, if they are possible to configure in a 3 monitor (center, right mirror, left mirror) setup for racing / flyight sims. But it might be worth a look?
Just use search engine to find various models / manufacturers.
Also i bet there are alot of tech websites, where you can drag&drop and virtually test your custom built PC setup. I.e. what CPU works well with what brand RAM + what motherboard do i need for Z type of graphics card etc etc.
