You can see for your self. For the 3rd race, Luigi's car has a lot more health than the rest, so his takes the longest to destroy, but you absolutely can explode it like everyone else. For the last mission, Samson's car is scripted to be destroyed only when it arrives at a particular location so it's protected unlike all the other racers.
That's exactly what you'll want to do. Blow them up.
Shooting them wont cause them to slow down, unless you actually get a good shot at their tires. You can actually deflate their wheels and watch them struggle around sharp turns. I did that to a 6th street racer's car and he pretty much swayed too far out and hit a wall upon making the turn.
But if you're going to shoot, aim for the driver. A couple good head shots will stop the car. Or, blow it up! Doesn't take much out of a pistol with high damage power, let alone a set of built in machine guns if your car has that feature. Remember you can prepare your pistols before you race, to ensure you get a good one to knock out racers with.
I love combat racing in 1st person view. Took some practice but once you get the hang of it, it's pretty exhilarating and cincematic.
Yup. When things look crazy, I hack their breaks and then go after the remaining cars with relative ease. Depending on your build and how much ram you have.
