Was just double checking. Suzi Hunter (has a small role in the expansion too) says that it's 'blade weapons' which can block bullets so I'm not talking out of my hat. :D
My guess is that the difference between eg mantis blades and katana will really come out with the additional skills/abilities from the new relic skill tree unlocked in the expansion. Be really interesting to see what those are, from the couple they've described they sound quite fun and along the lines of what you describe.
The official footage CDPR released from Play Days has the katana also blocking bullets.
Then you run a dual pair, the toxin legendary that has the near-instant return time in slot 1 and the ludicrous cutting speed legendary in slot 2, it's even more lethal, I'm limited by my ability to control and aim at my... hmm? targets... enemies... victims? end up slicing air a lot I probably look like General Grievous coming at you with 4 lightsabers spinning from the target's perspective.
I always thought they were just made up to have some semblance of melee variety. I was wrong. So happy I was wrong, too.
I would love something that give some balance to the minus columns of some of these... not that they need nerfing, this only works when you do a very specialized and targeted build, but... they're all smash smash smash or stab stab stab.
