Isn't it possible to turn off automatic update for this game in order to maintain your mods? Not sure as my other steam modding experience consists of Fallout 4 and a few others, which typically have seperate launchers and saves.
Think you should be able to avoid it updating (disable automatic, load from exe) but you can never roll back.
GOG also has more fluff if you buy over there, concept art and "freebies" that often arent on other platforms, small things like wallpapers and stuff. Nice, if that is your thing.
Thats about the only differences I can think of as far as the game is concerned.
There are a thousand arguments to be made both for and against Steam when you compare both platforms feature list. My above suggestion is only looking at the game alone and nothing else. For example, Steams couch co-op feature is a godsend for me and I love it, but Im not about to suggest that to you as a reason to buy on Steam :D
