Are you trying to have no cyberware at all there?
Sorry, once you have some cyberware there you cannot remove it only swap it out.
You can replace the ballistic coprocessor hand cyberware with the Tyger Claws dermal weave tattoo (goten from claiming your reward from Wakako, from the Sandra Dorset rescue) if you don't want to 'see' a hand cyberware.
If its gorilla arms/mantis blades, the only thing you can swap to is probably the arm based projectile launcher.
All three are pretty visible, but I think the arm cannon is the least visible.
That's your only choice currently, in vanilla game. (This may change with 1.7 and/or the expansion)

Unequip Cyberware.
Allows you to use the scroll wheel on your mouse while at a ripperdoc to uninstall and remove cyberware.
Mod says to remember to pull up your fists afterwards if you are removing any arm cyberware, to let the game update your visual appearance.
As for arms to choose from that have the least effect on gameplay, it would be the heavy arms that boost your strength.
Reason I say that is because they don't add another weapon to your scroll wheel.
Yeah, monowire is very simple. You can even get it before starting the heist, if you don't mind clearing Watson of ncpd, gigs and remembering to wipe the respawning gagoon points.
(You need 20 street cred to get the blue quality version, can grab it from Mr half-man half-megablock guy up near the Kabuki roundabout near where Dex drops you off after your first chat with him)
It can look a little buggy in the shower (at least it did for me with femV body sometimes)
go to your favorite ripperdoc, and unequip all your cybernetics and *attempt* to unequip the cyber arms (make sure the projectile launcher is off your quick-use bar). You will get the audio queue of it uninstalling, but they wont go away. exit the ripperdoc, go outside and press 4 (fists) to pull up your hands, which are still cybernetic. Manually save the game here, and quip to desktop. (i restarted my PC too, maybe this is part of it) Launch the game and go back to the ripperdoc, you should now be able to switch your arms to a different set, or uninstall cybernetic arms altogether. Let me know if this doesnt work for you! It may also help to strip off all your clothes and weapons.
