Organ transplants are a thing and if I remember correctly so are cloned tissue.
Yeah fauxpas there's transplants, but 'ganic transplants are for the ultra-rich, not you, a lowly corpo drone wageslave who could work for 'saka for 60 years and retire (unlikely) and still not have enough for a single replacement... certainly not the streetkid ganggoon living of scraps to the point he's risking his life klep'ing an un-stealable car, and certainly not the uneducated redneck nomad without an ED to his name.
See, that's another aspect of ripperdocs in the game they cleaned up and "made friendly".
(you notice no one is ripping parts off living humans when you walk in, and tossing them out crying or sedating them and leaving them on a bench blocks away... now sporting nasty, used, possibly malfunctioning limbs/organs; the law only requires you don't directly cause their deaths - so that shiny new synthetic heart is top-of-the-line and they can't pay, well they leave with a used, lowest-end 2nd generation synpump that has minimal filtering and will kill your ganic liver within 10 years, but that's the 'ripper' part of a ripperdoc's life. Also rips from corpses, rips more chrome from the dead than he installs into the living, usually. (Even the gourmet services like TT will repo parts and sell to rippers.)
That ripper would convince you to sell him that ganic liver you got, give you a crappy one that matches that synpump heart, and the eddies he makes off the organic liver covers all the services, settles your debt, and you still have a couple thousand to pay rent and eat with. Just another nobody in a sea of millions of nobodies.
That part of the Pondsmith universe, along with dozens of others, were probably considered "too depressing" or "too gritty" to include in CDPRs 3D version, meant for world distribution. (even though by the end of the game you've zero'd thousands of people, personally, especially The Devil ending.)
Fingers is the only one acting like a ripperdoc, and you're not supposed to like him, the rest are semi-honorable and business-like. Only the Corpo Plaza clinics should be clean and have turret defenses, immobilization fields, etc. They're rich, or work for rich people, or are clandestine owned by a megacorp, for experimentation of new models or firmware on the unsuspecting public.
If you really are set on going back, and don't want to wait for a mod to do it for you, I'd investigate the Game.gameuiICharacterCustomizationSystem() tree of parameters with CET. I'm fairly sure you can come up with a way to just un-do it, as though you never chopped off your hands/arms/legs. Also there are a couple savegame editors now, you can edit your starting save, and a current one, and compare your body stats - you might be able to just edit the save manually and un-do the chrome, too. I haven't looked.
If you want the abilities of the cyberware you installed, but just don't want to see your chromed-up or tattooed hands, there's texture re-painters and mesh removers, like this one: https://www.nexusmods.com/cyberpunk2077/mods/3897
Just extract that single .archive file into your \archive\pc\mod\ directory (no need for a mod installer), and boom!, 'organic looking hands, and no triple needle dots either - appears as though you are organic, but with the powers of chrome.
