GOG : well if you want to install some extra goodies you dont have to download the whole game. Also management of those goodies is less pain in the butt in comparison to steam
Steam: If the game will ever receive official steam workshop support after edgerunners update then it will become the definitive version to buy, but as of right if you want all your games on one store then theres that.
If you are Linux then Steam is usually the default option and to be clear i am Linux Mint 21 user and managed to get gog galaxy working quite easily but it is still easier to get thing to work on steam.
