The gig is in Watson at a pharmacist's office and he is not around when the gig goes down. He's there before the gig, he's there after the gig (and has some interesting dialog options with V as a result), but he's gone during the gig, so you don't have to worry about accidentally offing him.
The second is one of Rogue's side jobs (since she's not a regular fixer, hers don't show up with gig markers) and it takes place at a junk dealer (and even the junk is really junk). What happens there kind of depends on how you approach the gig. If you can sneak in through the back way without alerting the gangoons out front, complete the gig, and get out without being detected, then the gangoons will continue to function as junk dealers. If you take out everyone (because brownie points for badassery), then you've lost a junk dealer.
There's also food vendor over in 6th Street territory that's a side job. You can talk your way out if your Street Cred is high enough. Alternatively, you can just let the thing play out with "I'm not getting involved" and the merchant survives (he'll have choice words for you afterward), but you can accidentally off him if you get involved and are not careful with your weapons. He does not respawn.
There is also a vendor where you do part of a main mission, but he's a talkie, not a shootie. He sells nothing you can use, but you can unload stuff, if memory serves.
All the rest are just there for color. You can't buy anything from them, you can't sell anything to them, they're just kind of there and whether they survive or not doesn't affect you.
The only ones that matter are 2 ripperdocs though.
For me it was worth to delete everything at the second visit.
also there's another ripper you can kill nearby dr. chrome in the kabuki area. idk if there's more ripper you can possibly kill as well other than the two i've mentioned.
LOL I was about to say the exact same thing, I would also make sure I DON'T kill him with a head shot.
