I haven't done the racing missions yet on the 1.5 patch on my current playthrough yet, so I can't attest to how the cars handle in those missions.
It's been about my experience. Bikes are super forgiving. Cars handle about as good as you can expect depending on the car. I've done the Beast and Me races, and I didn't run into any problems. Raced twice in beast, once in V-Tech and once in that Batman supercar. Haven't seen any race gigs. Do those even exist?

I don't think there's any other racing missions. At least, not yet.
If you know how to tune, then you can easily balance out each car's issues.
From what I've seen, this game has it down pat, however CDPR devs are not too skilled in the balancing of it all, no disrespect intended: Camber is there - Springs are there - dampeners - sway bars - tire pressure(?), maybe - bound - rebound - brake balance - weight and transfer - downforce - toe - caster(?), maybe - differential settings(?), maybe - tire diameter and width - gear ratios. It's all there sure, but is meaningless if poorly balanced.
It takes a mod and the right additional script lines to be able to tweak these things.

It's simpler to rely on fast travel, and for shorter trips there's also a perk which removes the stamina cost for sprinting. Something like the "Coyote" can be useful out in the badlands area. Other than that, well, you can use the vehicles as a summonable stash, I guess.
To be fair, you can use your own vehicle in that race. She'll ask you before you start. I used mine. And you can choose to ignore the part about staying close to the target vehicle and just go on to win the race and get the regular rewards.
Or you can follow the car, let the scripted crash happen and let her shoot him and she'll give you her car. Or talk her out of it and get both cars (from what I've read.. I let her kill him and just got her vehicle/truck/SUV thing).
I fast travel a lot, but I also enjoy driving around in first person. Not something I thought I would like to do. There's something satisfying about seeing the interior of a V-Tech. If they ever do customization, I'd love the option to change up the interior, if only adding some minor things.
But man, the bikes in this game are so much better than cars because they behave so unrealistically, almost like an arcade game.

I mean look at the speed you are going. Nothing corners well at 120 mph.
It's not the best driving game ever but it's entirely viable now compared to launch.
