They are dolls because they aren't in control while being used with the program and the safe word just stops that program and puts the doll back in control.
The lore also tell us about the chip that: "It is comprised of three main functions - importing data from systems, steering the doll's behavior in-session and wiping the doll's memory after each and every session"
So they do get whiped, but they should be unaware having nothing to delete.
To me that is just your common dystopian setting in which they really are aware of what is going on and they delete that time so people don't think anything bad about it.
