It's the most immersive to me, but may be a bit tough if you don't know frequently used buttons by heart, yet.
But if you wanna keep something on, I suggest you keep the Job Tracker... It's all you need, really. And maybe damage numbers, because it helps to know if you are doing critical / status effect damage, etc.. and that your build is progressing in terms of strength.
P.S. - This is my 5th attempt at a Very Hard, no HUD, perma-death playthrough. I lasted 200 hours in my run... then had to restart due to dying to an explosive mine. I think it's super fun if you're a role-play masochist haha!

When you've installed it you go to Coyberpunk 2077/r6/scripts/LHUD and open the config file and you can change which parts of UI are on and off depending on various things.
I have it very minimal as:
Normal walking around:
Everything off.
Zoom:
Quest Tracker (the objective description on-hud), this is the only way it is active for me and main function of zoom for me, so I don't have to look at it anywhere else.
In Vehicle:
Minimap
Equip weapon:
Healthbar
Combat markers
Weapon roster
Combat/Stealth:
Healthbar
Combat markers
Weapon roster
Minimap
Scan:
Minimap
Loot Markers
World Markers
On first play-through you would want loot markers to just be active all the time, as you don't want to be constantly turn scan on/off to see loot, but it's the main thing which clutters HUD. I don't need to see Loot markers as I just play the game as main story run-throughs now with all the loot I want from the start of story, and it's immersive only seeing loot when scanner is on.

LHUD is one of the basic must-have mods IMO along with also Level Scaling https://www.nexusmods.com/cyberpunk2077/mods/1712
