What difficulty should I start on?
Experienced gamer and FPS player. Not super into bullet spongey enemies but I also want a decent challenge.

The game is not difficult. Start with maximum difficulty.

Go hard first, VH is really just bullet sponges that feel off IMO. Also you will probably not be challenged in terms of AI.

I usually start off on Hard and then bump it up to Very Hard after I reach level 20.

go very hard, anything under would probably be too easy for you. you'll end up one hitting everything eventually

Easy-to-hard is mostly damage output/received for difficulty (health totals as well). Very hard increases sponginess in addition to increasing enemy situational awareness / alert response (i.e. a stealth build and gameplay emphasis wouldn't really see a difference in difficulty from easy to hard, but would on very hard). Be aware that certain builds are derived from proportional damage to enemies, making them equally effective regardless of difficulty but more/less effective than other builds at different difficulties.

The sponginess of hard and very hard is annoying until your build's damage output kicks in, typically in the level 13-20 range depending on what it is. After that point, combat is trivial if not on Very Hard unless accessing over-leveled locations on the map early (i.e. Heywood or City Center once you can travel) or the secret ending's max-level enemies.

I suggest you start on hard, then switch to very hard by level 20 when you feel it's appropriate.

might wanna knock the difficulty down from very hard though at the end if you are going for the hidden ending where you legit kill everything possible in that area

I find the game too easy even on the "very hard" difficulty. Just oneshoting everything with my sniper. And I found "Sekiro: Shadows die Twice" too hard, and ditched it after 8 hours. So chose "hard" if you're a casual gamer, and "very hard", if you have no problems hitting the head once in a while, then the game is a cakewalk (sadly).

Even not getting all the damage buffs from your skills its still thus, the entire game.
