Does the game tell you when you are about to start act 2?
And also can you tell me precisely where and how act 2 starts so I can avoid it until I'm ready? The reason is many things change in act 1 when you start act 2 and will lock you out of quests if you haven't finished them.

Off topic question, how many long rests can you do before the druids finish their spell?

You start act 2 when entering the mountain pass or move to Grymforge in the Underdark. The game asks you if you are ready to proceed or if you still want to tie up lose ends.

As many as needed I believe.

There is no ACT II title on the screen if that's what you're asking. You get a warning telling you to wrap things up before progressing the story, though.

Yes, there is a warning that pops up before leaving the Act 1 content.

As for your other question I missed, you are free to long rest as much as you need.

in the underdark its when you go up the elevator.. i havnt gone past there... i went back to the mountain pass.. and you can reenter act 1 after going to the mountain pass.. so im unsure where in the mountain pass is the point of no return...

Just to clarify on this, simply moving to Grymforge doesn't start Act 2. You'll have to interact with an elevator that leads to the Moonrise Towers, which will then come with a pop-up (with a message about your progress and for you to tie up lose ends).

What I'm confused by is the Mountain Pass region. I keep seeing from people on here that the Mountain Pass is part of Act 1, yet when I try to go to that area, I get the same pop-up message as the elevators in the Underdark. So it'd be great to know whether going into the Mountain Pass is in fact making me leave Act 1 or not.

The act 1 / act 2 distinction seems pretty pointless to me. All of my act 1 quests stayed open and I could go back to act 1 areas and do them. I guess I must've already completed the ones lost in the act change?

Yeah, I think you're right. After pooling together the answers I've seen so far, it seems that going through the Mountain Pass *does* change some of the major plot points (such as the grove/goblin conflict). But since it's still an extension of Act 1, then minor quests may be left untouched until we finally move on to Act 2 (when everything is affected).

That's at least how I'm understanding things so far. Hopefully someone who knows for sure can share their thoughts :3
