This is headed in the right direction. I'd envision them as sort of a Gith variant of a Viking Skald - Sort of a Battle Bard/Poet. They would definitely know how to fight and be damn good at it. Think honeyed words laced with scorn and contempt for their foes, and absolute disdain for all but the mightiest of Gith warriors who have proven themselves in battle.
If you want to dig really deep on the RP, maybe you could justify it by imagining that the first Gith Bards came into existence when they figured out a way to break the Mind Flayer mental control over them by taking advantage of certain sounds or chants.
You can also Whistle. (no instrument equipped)
Not sure if it's still the case, but Gith have to hatch on the Material Plane anyway since nothing ages in the Astral, and they were basically stuck there until they killed an Illithid and were allowed to return.
Speaking of vikings, would an Oath of Conquest Paladin be thematically appropriate for such a character?
No, Paladins don`t steel and rape , Vikings does.
Oath of Conquest has the phrase "douse the flames of hope" seared into their own arm.
It's literally an oath dedicated to the act of subjugating others.
That kinda depends on the group. Typically it's left up to people to decide themselves, usually with the caveat 'so long as it doesn't lead to drinking or sex'. Many of the hardline do ban it though.

One thing I was wondering about was… apart from the culture is there anything different between Giths and Githzerai? Are they different races or just different groups? Could one imagine a character they create being either? Still thinking on the bard concept n how far one could take it. Of course I imagine one wouldn’t be able to use the racial lines for the Gith which might and miss out a bit.
In terms of class/race concept works either way. In terms of culture, they are radically different, so it would really just come down to backstory. War drums vs harmonics / lofi beats to study to sort of thing.
Key note with the Githzerai is that they live on Limbo where belief and force of will shape reality. Also Lae'zel would probably try to kill you on sight.
