I'll tell you what I do for that. I like to use a little thing I call my 'imagination' to fill in the details.
It's a pretty handy thing.
Also, by making a custom character you get one more companion, it doesn't matter in the long run, but can be important at the very begin of the game. I did not play the game with the presets, yet, but for example:
* If you play as Lae'Zel or Shadowheart, afaik the start of the game will have 1 less companion.
* If you play Astarion or Gale, you have one less person with you at that very beggining area, too.
while you can choose to start with some lore-related, pre-made character, i'm not sure you're losing much story if you choose to go "new"
each of the other 8 or 10 NPCs have a personal story. some are complex and others are straightforward, and since i find most of it annoying i really can't say i "miss" *more*
the problem i usually have with pre-made hero characters is they are sometimes not as flexible as generic characters - pre-made characters can have a restricted path
either way, i don't think i miss anything in the game sense - all those legacy heroes were nobodies at one point, and my game story is just another nobody having to save the world.
You also get to customize their appearance, where as Origin characters are locked into their default state. They can't even use the Magic Mirror to edit themselves.
