Prepared, I believe any fight can be won. Unprepared, going straight in, I can think of a few ;
The outside of the goblin camp while low level. The giths near the pass while being level 1 or 2. Killing every single possible ally in Act 2 then turning good, so you face everyone on your own. Attacking randoms in the city of Act 3. Ethel in Act 3, but don't destroy the shrooms.
You can't kill him during his coronation - but you can kill everyone else. Here it's important to take out these wall installations, which will eventually explode, or drop these small orbs, which will then explode. You can pick up the balls and stop them from exploding. This starts as soon as you cross the drawbridge. You must first kill all the fists and all the servants AND disable the wall installations (alarms and booby traps), as these will alert the steel guards.
You must do the same in the Coronation Hall. The steel guards are often right next to you. It is also better to buy scrolls/arrows beforehand, which you can use to disable or weaken the Steel Guards. You can buy them from Karlach's friend in the Undercity ;-)
After that, the fortress is virtually empty (in terms of guards) and Gortasch is easy prey once you've gotten as far as him.
In the best case scenario, everyone will be dead except Gortasch - who you'll then have to talk to and the "final battle" against him will be a long way off. I also recommend that you kill Orin first. She is a much weaker opponent and you might get a level up or at least enough experience points and cool loot ;-).
And it might be advisable to complete the quests from Ethel (as mentioned above), the carrion mystic (who you can kill again and again if you don't accept the quest, so to speak), and the poltergeists in the house of the artist's fiancée beforehand - and maybe even Ansur, the dragon, who you reach in the cellar (prison) of the fortress before you even get to the top to meet the Flaming Fists or Gortash's servants. Gortasch is not an easy opponent.

The fight isn't unwinnable, it's just extremely difficult. If you decide to immediately rush off and pick a fight with Gortash, you'll probably be under leveled too.
However, it is important to note that Steel Watchers will try to self destruct once their health gets low enough. You can also sneak around from the back of the hall and try to lure the steel watchers into a choke point by standing on the balcony in the backroom.
Additionally, you can pick up any grenades dispensed by the launchers and throw them at the enemies before they explode. Doing so makes the fight with Gortash rather comical because of how powerful these things are.
Finally, Gortash is also susceptible to Transmutation spells; most notably FLESH TO STONE. If you maintain concentration for all 3 rounds, he will be permanently petrified, which counts as having defeated him.
Most of the "unwinnable" fights are like that. Larian lets you try, but you need to be smart about it because you will be woefully unprepared for such an intense fight.
Me personally, I just like to rescue the duke and then destroy the steel watch foundry before attempting to kill Gortash or Orin.
I didnt bother to take out the Steel Watch Foundry my first play through and easily killed Gortash first time on Tactician. Also got the achievement for not setting off any traps, which was by accident.
One way is to clear the ground floor first so you have somewhere to retreat to. Enter the upper chamber via the main entrance long enough to aggro someone there, then lure attackers down a few at a time. Retreating onto the drawbridge and back to camp to recover as needed.
Another fun way to kill just Gortash requires you to take the higher level illithid powers so all your party has Fly. Then fly around the left side of Wyrm's Rock and sneak in the back of the throne room. You can get to within a short distance of Gortash without aggro. Kill him and fly out your party in one or two rounds. You will likely need a well-designed team for this, such as two paladins and two sorcerers, with everyone Hastened. You obviously only really need to get one of your party out alive.
There are several possible variations on these as there are five ways into the upper chamber, each of which can be made choke/retreat points.
